Ingredients for the Healthy Marbled Banana Bread 

  • Bananas – What’s banana bread without bananas?? We will use about three medium big bananas. I am sure this recipe will work great with pumpkin puree, too, so if you feel like experimenting, you can try to make this recipe with pumpkin. 
  • Date syrup – One of my favorite sweeteners. It is a healthy substitute for sugar, high in antioxidants, and rich in minerals and vitamins, including zinc, magnesium, potassium, calcium, iron, vitamin C, vitamin B6, and vitamin A.
  • Coconut oil – Coconut oil is an excellent substitute for butter in baked goods. 
  • Tahini – It adds a nutty flavor and creamy texture, contains a good amount of protein, and is rich in B vitamins, vitamin E, and minerals, such as magnesium, iron, and calcium.
  • Soy milk – Soy milk has the most protein of all the plant-based milk options, so baking that needs a lot of structure (cakes and bread) is the best dairy-free option.
  • Oat flour – It is affordable, easy to make (by grinding oats), and gives a crumbier and chewier texture to baked goods.

To make the chocolate layer, we will mix three ingredients:

  • Date syrup 
  • Plant milk 
  • Cocoa powder

Healthy Marbled Banana Bread recipe:

  • 300g banana puree 
  • 150ml date syrup 
  • 30g coconut oil 
  • 30ml tahini 
  • 1 teaspoon baking soda 
  • 150ml soy milk 
  • 200g oat flour
  • 50g Vitally Vegan protein powder (Coconut flavor)
  • Chocolate layer: 
  • 12 ml date syrup 
  • 30 ml plant milk 
  • 20g cocoa powder 

On top: 

30g walnuts

Healthy Marbled Banana Bread

Instructions:

Blend the bananas, coconut oil, tahini & date syrup. After that, add baking soda, protein powder, oat flour, and soy milk & blend again.

To another bowl, mix the ingredients for the chocolate layer. Then, split the main mixture into two parts, and add the chocolate mix to one of them.

To a baking tray, start adding the chocolate mixture, then the regular one, and keep alternating until you use both mixtures.

Sprinkle on top walnuts or your favorite nuts (chocolate will work well, too).

Bake for 29-30 minutes at 180 degrees. 

Cut in 12-14 or more pieces once it cools down.
