Vegan Protein Bounty Bars

As a kid, the bounty bars were one of my favorite treats.
I recently remembered about them, so I thought to recreate a healthier & better version of bounty bars at home.
I ended up with amazingly delicious coconut bars that are:
- Healthy & packed with protein
- Quick and easy to make
- Vegan, gluten-free & sugar-free

Vegan Bounty Protein Bars – Ingredients:
- Unsweetened shredded coconut – The unsweetened, dry coconut will give the bounty bars a rich, and slightly sweet flavor.
- Coconut protein powder – I used Vanilla & Coconut flavored protein powder by Bare Blends for this recipe. If you want to use the same product, follow this link for $10 OFF your purchase.
- Tahini – To add a nice, nutty, and earthy flavor to the bars.
- Coconut oil – To bind the bars.
- Date syrup or agave – I used date syrup, but because it is darker, it also made the coconut part of the bars darker You can use a sweetener that won’t change the color, such as agave syrup.
- Coconut milk from a can – You’ll need the thicker layer on top.
- Melted dark chocolate – You can either melt dark chocolate bought from the store or make homemade chocolate with the following ingredients – 50g cacao butter, 25g cocoa powder, and 25g date syrup.
How to make homemade Vegan Bounty Protein Bars:
Ingredients
- 100g unsweetened shredded coconut
- 50g Bare Blends protein powder (Coconut flavor)
- 15g tahini (1 and a half tbsp)
- 15ml coconut oil, melted (~3 tbsp)
- 30g date syrup (2 tbsp)
- 75ml coconut milk from a can
- Melted dark chocolate (or homemade chocolate made with – 50g cacao butter 25g cacao powder 25g date syrup)
Instructions
Add the unsweetened shredded coconut with the protein powder and mix in a bowl.
Then add the tahini, coconut oil, coconut milk, and date syrup & mix well.
Once everything is well combined, transfer to a small baking tray or a box and spread the mixture. Put in the freezer.
Next, melt dark chocolate, or make a homemade version of cacao butter, cacao powder, and date syrup.
Once melted, take out the chilled mixture, and cut it into 14-16 bars.
Dip each bar in the chocolate, and put it to cool down on a metal net tray.
Vegan Bounty Protein Bars
Guilt-free, healthy & packed with protein coconut bars, that are gluten-free, sugar-free & quick, and easy to make.
Ingredients

- 50g protein powder (Coconut flavor)
- 15 g (1 and a half tbsp) tahini
- 15 ml coconut oil
- 2 tbsp date syrup (30g)
- 75ml coconut milk from a can
- Melted dark chocolate (or homemade chocolate made with - 50g cocoa butter 25g cocoa powder 25g date syrup)
Instructions
- Add the unsweetened shredded coconut with the protein powder and mix in a bowl.
- Then add the tahini, coconut oil, coconut milk, and date syrup & mix well.
