Vegan Protein Bounty Bars - Almost Zero Waste

When I was a kid, the bounty bars were one of my favorite treats.  

I recently remembered my old guilty pleasure, so I thought to recreate a healthier & better version of bounty bars at home.

I ended up with amazingly delicious coconut bars that are: 

  • Completely guilt-free 
  • Healthy & packed with protein
  • Quick and easy to make 
  • Vegan, gluten-free & sugar-free

Vegan Protein Bounty Bars

Vegan Bounty Protein Bars – Ingredients:

  • Unsweetened shredded coconut – The unsweetened, dry coconut will give the bounty bars a robust, nutty, and slightly sweet flavor. 
  • Coconut protein powder – I used coconut flavored protein powder by Vitally Vegan for this recipe. If you would like to use the same product, use the code ZEROWASTE to get £10 OFF your purchase.
  • Tahini – To add a nice, nutty, and earthy flavor to the bars.
  • Coconut oil – To bind the bars.
  • Date syrup or agave – I used date syrup, but because it has a darker color, it also changed the color of the bars from the inside. That’s why I recommend using a sweetener that doesn’t have a dark color, such as agave. 
  • Coconut milk from a can – You don’t need the one with the highest fat, but the medium one has a thicker layer on top. You’ll need that thick top layer.
  • Melted dark chocolate – You can either melt dark chocolate bought from the store or make homemade chocolate with the following ingredients – 50g cocoa butter, 25g cocoa powder, and 25g date syrup.

How to make homemade Vegan Bounty Protein Bars:

Ingredients

  • 100g unsweetened shredded coconut 
  • 50g Vitally Vegan protein powder (Coconut flavor)
  • 15g tahini (1 and a half tbsp)
  • 15ml coconut oil, melted (~3 tbsp)
  • 30g date syrup (2 tbsp) 
  • 75ml coconut milk from a can 
  • Melted dark chocolate (or homemade chocolate made with – 50g cocoa butter 25g cocoa powder 25g date syrup)

Instructions 

Add the unsweetened shredded coconut with the protein powder and mix in a bowl.

Then add the tahini, coconut oil, coconut milk, and date syrup & mix well.

Once everything is well combined, transfer to a small baking tray or a box and spread the mixture. Put in the freezer.

Next, melt dark chocolate, or make a homemade version of cocoa butter, cocoa powder, and date syrup.

Once melted, take out the chilled mixture, and cut it into 14-16 bars.

Dip each bar in the chocolate, and put it to cool down on a metal net tray.

Guilt-free, healthy & packed with protein coconut bars, that are gluten-free, sugar-free & quick, and easy to make.

Ingredients

  • 100g unsweetened shredded coconut 
  • 50g Vitally Vegan protein powder (Coconut flavor)
  • 15 g (1 and a half tbsp) tahini 
  • 15 ml coconut oil 
  • 2 tbsp date syrup (30g) 
  • 75ml coconut milk from a can 
  • Melted dark chocolate (or homemade chocolate made with - 50g cocoa butter 25g cocoa powder 25g date syrup)

Instructions

    1. Add the unsweetened shredded coconut with the protein powder and mix in a bowl.
