This incredibly juicy, moist, healthy Apple Pecan Loaf is probably my new favorite thing!

It is not only super delicious, but it is very healthy and ideal for breakfast – just spread some nut butter on top, and you will have the most satisfying and tasty meal.

Best of all, it is super easy and fast to make; all you need is to mix a couple of ingredients in a bowl, bake, and voila – you got incredibly juicy deliciousness.

Let’s look at what ingredients you will need for the Vegan Apple Pecan Loaf.

Ingredients for the Juicy Apple Pecan Loaf:

  • Apple – Shredding the apples will infuse each bite of the loaf with rich, sweet apple flavor.
  • Flax “egg” –  A vegan egg substitute made of ground flax seeds and water. It’s 100% natural, vegan, and gluten-free.
  • Olive oil – I never use olive oil; however, I decided to change that for this recipe. I decided to use it because olive oil gave a much fluffier, moister, delicate final result compared to using other oils.
  • Oat flour – My go-to flour for almost any baked goods. It is super easy to make (blend oats!), it is affordable, versatile, and packed with fiber and protein.
  • Pecans – I added pecans For a delicious crunch and because of their great taste. However, they are also a fantastic source of protein, and they contain more than 19 vitamins and minerals! Plus, they are packed with good fats.
  • Protein powder – For nearly all of my cakes and desserts, I like to add protein powder. It gives additional protein, which is always a plus. I use Vitally Vegan protein powder, which is very heat stable, which means it retains its nutrients even after being cooked. A single serving provides 20g of protein and contains all 9 Essential Amino Acids! If you want to give it a try, you can use the code ZEROWASTE for £ 10 OFF your purchase.
  • Plant-based milk – For this recipe, I used soy milk, but feel free to use oat, almond, etc.

Instructions

  1. Add the flaxseeds and the milk to create a flax “egg” in a glass. Leave it for around five minutes on the side.
  2. Next, mix the olive oil, maple syrup, the flax egg, and the milk in a bowl. After that, grind three medium-sized apples, and then add the wet mixture to the apples.
  3. Once everything is combined, add the oat flour by sifting it with a sifter or strainer. Sifting is a process that breaks up any lumps in the flour and aerates it simultaneously. Sifting the flour will improve the consistency of this recipe, will make the flour much lighter, and is easier to mix with the other ingredients.
  4. Then add the protein powder, cinnamon, baking soda, and combine well. In the end, add crushed pecans, and mix.
  5. Line a loaf pan with baking paper, and transfer the mixture. Add pecans on top, and then bake at 180 degrees for 26-27 minutes.
