Juicy Apple Pecan Loaf (Vegan)

This juicy and moist Apple Pecan Loaf is probably my latest favorite healthy cake.
It is delicious, wholesome, and ideal for any moment of the day – just spread some nut butter on top, and you will have a satisfying treat.
Best of all, it is easy and fast to make; all you need is to mix a couple of ingredients in a bowl, bake, and voila – you have a juicy deliciousness.
Let’s look at what ingredients you will need for the Vegan Apple Pecan Loaf.

Ingredients for the Juicy Apple Pecan Loaf:
- Apple – Shredding the apples will infuse each bite of the loaf with a rich, sweet apple flavor.
- Flax “egg” – A vegan egg substitute made of ground flax seeds and water (or plant milk).
- Olive oil – Olive oil gives a fluffier, moister, delicate final result.
- Oat flour – My go-to flour. It is easy to make (blend oats!), affordable, versatile, and packed with fiber.
- Pecans – I added pecans for a delicious crunch and because of their great taste. However, they are also a fantastic source of protein, and they contain more than 19 vitamins and minerals! Plus, they are packed with good fats. I also tried this recipe with walnuts, and works just as well.
- Protein powder – One of my favorites is Form Nutrition, which doesn’t contain artificial flavors or sweeteners. A serving provides 30g of protein and contains all 9 essential amino acids. You can order it for the US or for the UK and Europe. I tried the recipe without adding protein power (and a spoon of psyllium husk instead), and worked well, too.
- Plant-based milk – For this recipe, I used soy milk, but feel free to use oat, almond, etc.

Juicy Apple Pecan Loaf:
Ingredients
- 471g red apple, shredded (about three medium apples)
- 16g olive oil (3tbsp)
- 40g maple syrup (3,5 tbsp)
- 20g (2 tbsp) flaxseeds + 33 ml (5tbsp) soy milk
- 150g oat flour
- 50g Form Nutrition – Vanilla or Tiramisu Flavor (or omit & add 1 tbsp psyllium husk instead)
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 50g soy milk
- 50g pecans, crushed (not too finely) + 40g pecans on top (walnuts work well too)

Instructions
- In a glass, add flaxseeds and milk to create a flax “egg”. Set aside for around 5 minutes.
- Next, mix the olive oil, maple syrup, the flax egg, and the milk in a bowl. After that, grind three medium-sized apples, and then add the wet mixture to the apples.
- Once everything is combined, add the oat flour by sifting it with a sifter or strainer. Sifting is a process that breaks up any lumps in the flour and aerates it simultaneously. Sifting the flour will improve the consistency of this recipe, make the flour much lighter, and make it easier to mix with the other ingredients.
- Then add the protein powder, cinnamon, and baking soda, and combine well. In the end, add crushed pecans, and mix.
- Line a loaf pan with baking paper, and transfer the mixture. Add pecans on top, and then bake at 180 degrees for 26-27 minutes.

Which apples are best for this recipe?
You can use Gala, Fuji, Golden Delicious, Honeycrisp, or Ginger Gold. You can use any type you like, even Granny Smith, which is more sour.
What to do if the batter is too thick?
If your apples have less water content, the batter might end up a bit too thick. In that case, just add a bit more milk.
Can this recipe be baked as muffins?
Yes, you can do the recipe as muffins, too! Add one and a half to two tablespoons to each muffin liner, and check after about 15-20 minutes of baking.
